Sources and Hazards of Wastewater in Meat Processing Plants

by:BOQU     2023-03-09
Meat processing wastewater is industrial wastewater discharged during meat processing. It generally includes two parts: slaughtering and meat processing, and some also have by-product workshops to produce edible oils, gelatin, soap, etc. The waste water mainly comes from slaughtering, depilation, disintegration, cavity opening, cleaning processes, workshop equipment and ground flushing. Wastewater contains blood, hair, grease, minced meat, impurities, etc. The water quality is poor, BOD5300-2200mg/L, suspended solids 600-3000mg/L, grease content 200-1000 mg/L, Escherichia coli 2.38×106-2.38×107 /L, the amount of wastewater is large. About 10 tons of waste water is produced for every ton of live livestock slaughtered. Sources of Meat Processing Wastewater Detection The production process of slaughter and meat processing is roughly as follows. Before slaughtering, livestock must undergo quarantine inspection. When slaughtering, they enter the slaughter area. Slaughter and bloodletting by cutting off veins. Cattle are peeled mechanically, but pigs are generally not peeled. The pig body is boiled in a scalding pool with a water temperature of 60°C and then removed. Then disembowel and take out the viscera, separate the edible part from the non-edible part, then wash the carcass, divide it, refrigerate it, and process it into different meat products, such as fresh meat or color preparations and cured, pickled, smoked, canned meat, etc. . Wastewater from slaughter and meat processing plants is mainly generated in the slaughter process and preparation process. The waste water mainly comes from pen washing, pre-slaughter rinsing and slaughtering, bloodletting, hair removal, disintegration, opening and splitting, cleaning viscera and stomach, etc. Processes such as oil extraction, deboning, cutting and non-staple food processing will also discharge certain waste water. In addition, in the meat processing plant, there is cooling water from the refrigeration room, as well as domestic sewage discharged from the workshop sanitary equipment, laundry room, office building and on-site facilities. Hazards of Meat Processing Wastewater Detection Meat processing wastewater contains a large amount of pollutants such as blood, grease, oil lumps, hair, meat chips, visceral debris, undigested food and feces. It is an unpleasant blood red in appearance and has a disgusting bloody smell. In addition, in meat processing wastewater, there are also bacteria related to human health such as fecal Escherichia coli, fecal streptococcus, and salmonella, but generally do not contain toxic substances. The pollutants contained in meat processing wastewater are mainly organic substances in physical forms such as dissolution, colloid and suspension. The pollution indicators mainly include Ph, BOD, COD, SS, etc., in addition to total nitrogen, organic nitrogen, ammonia nitrogen, and nitrate Nitrogen, total solids, total phosphorus, sulfate, sulfide and total alkalinity, etc.
